Basil and Garlic Herbed Butter

This is such a delight to have on hand to season grilled meats, melt into pan sauces, or even add to soup or any pasta.  It’s easy to make, freezes well and adds so much flavor to your foods.

8 to 12 servings

1 stick (4 ounces) softened unsalted butter

2 tablespoons finely minced fresh basil

3 cloves finely minced garlic

salt and freshly ground pepper-to taste

In a food processor (or even by mashing with the tongs of your fork–this will give a more rustic appeal) blend all ingredients till you have reached desired consistency.  Scrape sides of food processor/bowl saving each precious spoonful.  Set mixture onto parchment/wax paper and roll into a uniform log making sure to level off both ends.  Freeze until ready for use.  Enjoy!

Chef’s Tip: use this same process with goat cheese and add your favorite herbs and spices to make a delicious spread for a party.
