Greek Salad

In honor of the Greek parade I witnessed today on my way back to Astoria, I thought my favorite salad was in order.  Sometimes the simplest ingredients are the best if paired wisely.  This salad has under 10 ingredients including the salt and pepper but tastes absolutely divine.


Greek Salad

1/3 cup pitted kalamata olives

1/3 cup sliced red onion

2/3 cups sliced cucumber

2/3 cups red vine tomatoes, diced

2/3 cups feta, diced

2 tablespoons olive oil

salt and freshly ground pepper

1 tablespoon basil chiffonade

In a medium bowl mix olives, red onion, cucumber, tomato, and feta.  Drizzle olive oil over salad and season to taste with salt and pepper.  Finish with basil chiffonade.  Serve chilled.  Perfect for a picnic or just some healthy snacking.  Enjoy!
