Banana Oatmeal Muffins

I like my bananas green so once they pass that threshold they are destined to become banana bread or muffins.  It was a slow morning in Astoria and muffins seemed like a great way to begin the day.

Banana Oatmeal Muffins

Makes 6 giant dense and delicious muffins

2 very ripe bananas (about 1 cup), mashed

1/2 cup plain yogurt

2 large eggs

1/2 cup (1 stick) butter, melted

1 teaspoon vanilla

1/4 cup raisins

1 cup oatmeal

1 cup flour

1 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

1/4 teaspoon salt

3 teaspoons toasted sesame seeds, optional

Preheat the oven to 350.  Grease a muffin tin for 6 large muffins.  In a medium bowl mix banana, yogurt, eggs, butter, vanilla, and raisins.  In a large bowl mix instant oatmeal, flour, sugar, baking powder, baking soda, cinnamon, and salt.  Add your wet mixture to your dry, stirring until smooth and fully mixed.  Pour your muffin batter into your muffin tin and top with toasted sesame seeds.  Bake for about 25 minutes, until a toothpick comes out clean.  Enjoy!
