Shrimp Ceviche in an Avocado Boat

Yield: 1 avocado boat * Zest Factor: medium


If there’s one fruit that can’t be left out from this feast it’s the avocado. Pair it with some ceviche and you have a trio of bright colors that taste as good as they look.

½ cup fresh medium sized shrimp, deveined, shelled, diced

3 limes, juiced

¼ teaspoon hot smoked paprika

¼ teaspoon cumin

1 teaspoon cilantro leaves

3 teaspoons minced jalapeno

1 tablespoon mango, baby dice


½ avocado, hollowed, fruit diced

In a small bowl, combine shrimp with lime juice and let rest for 10 minutes until cooked fully. Drain extra lime juice and mix shrimp with paprika, cumin, cilantro, jalapeno and mango. Season to taste with salt then carefully stir in diced avocado. Return entire mixture to avocado shell and serve.
