black bean and corn pico de gallo
Serves 8-10
1 (15.5 ounce) can drained black beans
3 cups diced tomatoes
1 cup corn kernels
1 cup diced yellow onion
1/2 cup chopped cilantro leaves
2 tablespoons olive oil
2 limes, juiced
1 teaspoon cumin
sea salt.
In a large bowl, mix all ingredients until fully incorporated and season to taste with sea salt. Voila-you are done! Enjoy your pico de gallo!
