Broccoli Rabe & Ricotta Pizza
(serves 1 individual pizza)
When the craving for pizza hits me, I won’t settle. I’m a girl who appreciates a good crunchy crust, fresh tomato sauce, fresh mozzarella, and killer toppings. So when a whole pie is a little to much temptation and a good brick oven a little too long of a walk in the rain. I try this little trick to cut the calories and crank up the taste.
1 tablespoon olive oil
2 large cloves of garlic, sliced thin
2 cups broccoli rabe, washed
salt and freshly ground pepper
1/4 cup tomato sauce
2 thick slices fresh mozzarella
3 tablespoons reduced fat ricotta cheese
1 tablespoon chile pepper oil
1 tablespoon red pepper flakes
Preheat your oven to 450. In a medium sized saute pan, add 1 tablespoon olive oil and sliced garlic over medium-high heat. Cook for 2-3 minutes then add broccoli rabe and cook an additional 6 minutes, seasoning with salt and pepper. Remove from heat. On a baking sheet add your flatbread and spread with tomato sauce. Next, top with sliced mozzarella, dividing cheese evenly around pie. Then top with dollops of ricotta cheese and finish with sauted broccoli rabe. Bake for 12-14 minutes until edges have browned and cheese has fully melted. Top with red pepper flakes and chile pepper oil. Enjoy!
