Cajun Shrimp Mac n’ Cheese

There is nothing that says comfort food more than mac n’ cheese.  Just add some spicy shrimp, a wicked cheese sauce, and crunchy crust and you are talking some seriously pleasurable snacking.

1 tablespoon butter

½ pound (26 count) shrimp, shelled, deveined, cut into 1/3’s

1 tablespoon minced shallot

¼ teaspoon cayenne

¼ teaspoon paprika



1 tablespoon butter, melted

½ cup plain breadcrumbs

½ cup grated cheddar cheese

1 teaspoon Slap Ya Mama Seasoning

cheese sauce:

2 tablespoons butter

2 tablespoons flour

1 teaspoon red pepper flakes

1 ½ cup whole milk

½ cup heavy cream

3 cups grated gruyere

1 teaspoon Dijon

1 teaspoon Slap Ya Mama Seasoning

½ pound shell pasta, (cooked according to package instructions)

Preheat oven to 350.  Grease an 8 x 8 inch casserole dish with butter. In a large sauté pan over high heat (pan’s sides must be at least 2 inch deep), add 1 tablespoon butter, shrimp, and shallots and stir frequently. Coat shrimp with cayenne and paprika and cook till just pink (about 3 minutes).  Remove from pan and save for later use.  In a medium bowl, combine all topping ingredients and mix well.

Next, in your large sauté pan, add another 2 tablespoons butter and mix with flour and red pepper flakes to create a roux.  Stir constantly for about 3-4 minutes until your roux picks up the first hint of color.  Then add in your whole milk and bring to a boil.  Reduce to a simmer and whisk constantly for 3 minutes.  Then add in cream, gruyere, Dijon, and Slap Ya Mama. Simmer until cheese has melted smoothly into sauce (about 4-6 minutes).  Remove from heat and cover cheese sauce with wax paper.

To finish: mix cooked shell pasta with cheese sauce. Return shrimp to mixture and pour into your casserole dish. Cover with breadcrumb topping and bake for 20-25 minutes until top is golden brown and sides are bubbly. Enjoy-deliciously cheesy and bubbling delicious Cajun Shrimp Mac n’ Cheese!
