Grilled Halibut with Mango Salsa

(serves 4)

I had the hankering for a little something different.  The mangoes at the local produce stand were perfect and frankly I’d had too much steak lately (if there can be such a thing). Thus was born a fantastically refreshing dinner in hopes of eating my way to Spring, even if the weather refuses to cooperate.

Mango Salsa:

1 ripe mango, peeled, pitted and cubed (about 1 large cup)

3 tablespoons fresh minced jalapeno

1/2 cup diced tomato

3 cloves garlic, pressed

1/4 cup cilantro leaves, chopped

1/4 cup finely diced red onion

1 teaspoon cumin

2 teaspoons lime juice

salt and freshly cracked pepper

Rice Pilaf

4 cups vegetable stock

salt and freshly ground pepper

1 lemon, zested, juiced (discard pulp)

2 cups long grain white rice

2 tablespoons olive oil

2 large scallions, sliced thinly

Grilled Halibut

2 tablespoons olive oil

4 (4 ounce) fillets halibut, skinned and boned

1 teaspoon ground ginger

salt and freshly ground pepper

2 teaspoons lemon juice

In a large bowl mix mango salsa ingredients.  Set aside once mixed through.  Next, in a medium stock pot (with a lid) bring chicken stock to a boil. Season with salt, pepper, and lemon zest and juice.  Once liquid has reached a boil, add in rice, stir, and cover.  Reduce heat to a simmer and cook for 20 minutes.

As rice is cooking, fire up your grill.  Next, rub your halibut fillets with olive oil, ginger, salt, and pepper.  When rice has 6 minutes left, begin grilling fish about 2-3 minutes per side until fish is just starting to flake.  Remove fish to a platter and season with lemon juice.  Next, finish rice by adding olive oil and scallions.  Mix and season additionally with salt and pepper if needed.

To plate: add a cup of rice pilaf to each plate, flatten top and lay a fillet of halibut on top, then finish by adding about 2 tablespoons of mango salsa to the center of the fish.  To add extra heat, dollop some sambal on your rice–it definitely adds a welcome kick.  enjoy!
