Deliciously fresh, sweet, crisp and tasting explicitly of Summer, this salad is a true treat. Crumbled feta ups the ante and the result is sweet and savory and infinitely lovely.
1/4 cup thinly sliced red onion
5 cups chopped green leaf lettuce (or sub in: Boston Bib/Watercrest)
3 tablespoons olive oil
2 tablespoons balsamic vinegar
salt and freshly ground pepper
2 cups cubed watermelon
1 cup crumbled feta cheese
Soak red onion in a small bowl of water for about 1 hour to mellow its bite. Next, in a large mixing bowl, combine salad greens with olive oil and balsamic. Toss and season with salt and pepper. Arrange on a large plate or bowl. Next, add in watermelon to mixing bowl and toss once more. Top greens with red onion and watermelon then crumble feta on top. Finish with freshly cracked pepper. Enjoy, a perfect summer salad!
